It's quite possible this "unboxing" is simply a dummy model placed in the trappings of a Google Pixel 2 XL.
From the looks of things, Google will continue to include the audio adapter with the new Pixel 3 devices.

There have been multiple reports in the past revealing a notch design for the Pixel 3 XL. Both the front and rear camera will support Portrait mode, which Google introduced in the 2017 variants with Pixel 2 phones. The leaked device was remotely erased, so we didn't really get to see much of the software, or how Android Pie looks on this thing.
In terms of hardware, the phones will likely be powered by the Qualcomm Snapdragon 845 processor, given these are premium flagship phones. For now, the OS is "Android 9", although it would not be surprising to see that change to Android 9.1 in time for release-Google usually cooks up a x.1 release specifically for its phones. They appear to be USB-C headphones, but with that very familiar Pixel Buds design.
In the video you'll see most of the concentration on the taking out of the contents of the box. There seems to be a plastic box in the middle of the headphone cord, which might be for an in-line remote. In-box accessories can vary from country to country, so if you are that interested in pack-in Google headphones, make sure they come with the version shipping in your territory.
